Risotto with milk

This sweet temptation – sutlyash. Some religions pay special attention to it, and in Asia, as we know, rice is the main raw material for food and export.

In Buddhist sutras it is written that the last dish that the Buddha ate before receiving enlightenment was with the taste of cardamom “kheer” or milk with rice, and in the Victorian era, the dessert was used as a homemade food, which is served in more poor families. In today’s Portugal it is called “arroz doce”, in Macedonia paw, and in Turkey – sutlyash. Whatever it is called, it basically contains milk, rice and sugar.

Now I will show you how to make milk with rice, but not exactly. I imagine something between milk with rice and caramel cream with a creamy consistency, a wonderful aroma prepared in the oven. That’s why I won’t swear much – I roll up my sleeves and hop in the kitchen.

Necessary products:

glass with a capacity of 300 ml.
baking dish: 4 clay pots

1 cup rice
1 liter of fresh milk
2 tbsp. vanilla starch / or taste to your liking /
220 ml lukewarm water to dilute the starch
4 egg yolks
4 tbsp. sugar / if you want to be sweeter add more sugar /
cinnamon, pure oil

At the outset, I want to point out that in some recipes, the rice is boiled to readiness and the milk is left to boil. I proceeded in the opposite way – I boiled the rice until semi-cooked and warmed the milk. As for the rice, I will be sure that I will not eat boiled rice and the grains will remain whole.

So, wash the rice and put it to boil until semi-finished, then drain with a colander. Since I didn’t have it available, I used a tea strainer. Scrape some of it and drain.

Stir the water with the starch, eggs, sugar and cinnamon with a fork. Stir for about 7/8 minutes and add the rice.

At the bottom of the pot put about 1 tsp. butter and top with the milky rice.

Bake without a lid at 170 degrees or until the rice is ready and you get a golden crust.

Baking time depends strictly on what kind of oven you use. Mine bakes strongly and that’s why it took me about 15 minutes for the jam to be ready.
