Italian ravioli

For the first time I make homemade pasta. It is not difficult and does not take more than 10 minutes for the dough to be ready. It can be said that this recipe is economical due to the ingredients that contain the dough – three.

If I have to think, from a sacred point of view, the number three combines talent and fun, symbolizes the ability to adapt. People born under the sign “three” are optimistic, which leads me to think that I was very positive about this recipe / may be due of divine powers / and not only for her, but this is another topic of conversation … Apparently I catch from the superstitions of the Italians, for whom the number 13 / still contains the number 3 / refers only to the number of diners. Exactly 13 people should not sit at the table, which is associated with the Last Supper in the Bible, at which Judas Iscariot was the last, thirteenth, seated at the table.

The dish that I will present to you is for three portions. So roll up your sleeves and immerse yourself in the culinary world of Italy, but on Bulgarian territory. The other thing I will mention is that I will miss the recording of the tomato sauce / you can see it in the “sauces” section – sauce with fresh tomatoes and basil /

Necessary products:

3 eggs
350 g of flour
pinch of salt

For the stuffing:

1/2 packet of cream cheese
a pinch of oregano
a handful of raw walnuts
1 clove garlic

Method of preparation:

Knead a soft dough from the above products, initially using a mixer to break the dough, not a fork. This way you will avoid the formation of lumps in the mixture. After you have kneaded it, leave it to rest for 15 minutes.

While you wait for the dough to relax, prepare the filling.
Roll out the dough about 2 mm with a rolling pin and with the help of a cup / the size depends on you / form circles.

Through a circle put the stuffing, spread around it with egg white or water and stick with the “comrade” of dough. Press with a fork and in boiling water, where you put 1 tbsp. salt release the dumplings.

Here I want to note that the water must boil well. In this way, the water bubbles do not allow the dumplings to fall to the bottom and stick. Boil for about 3-4 minutes. If you are not sure, take out a ravioli and check if the dough has boiled.

The recipe for homemade ravioli is fulfilled and you make your own sauce – carbonara or tomato sauce. I decorated with parmesan.
