Stuffed eggplant with risotto and chicken

One of the most beloved (at least by my grace) and delicious vegetables, coming from Sri Lanka and India is eggplant. With its fleshy texture and easy way to prepare, it allows me to experiment in the kitchen and show my virtuoso skills according to my friends. Without much hesitation, I present to you the following recipe, which I often prepare at home to please my cannibals.

Recipe for 2 servings:

1 medium eggplant
2 tbsp. risotto
1/2 chicken fillet
250 g canned diced tomatoes or 3 medium-sized grated tomatoes
150 g of yellow cheese
2 tbsp. mayonnaise / or cream cheese /
1 bunch parsley
1 bunch of dill / can be replaced with savory /
oil, salt, pepper, garlic / wish /

Method of preparation:

Cut the eggplant into slices about 5 cm in size and salt them. Depending on the size of the eggplant you should get 4 pieces of chopped vegetables. One tip – make sure the eggplant is not too thick and long enough to roll it up, or at least be able to overlap both ends after placing the filling.
Allow the eggplant slices to drain. Wash them and arrange them on baking paper. Grease with oil on both sides, salt and bake at 200 degrees until golden brown. To make sure they are baked, bang with a toothpick. If it enters the meat freely, it means it’s time to take them out of the oven.

Set them aside to cool and start preparing the filling. For this purpose, boil the rice and the chicken separately / you can also use roasted chicken /.

After cooking, cut the chicken into small cubes and add it to the rice. Season with mayonnaise / or cream cheese /, dill / or savory /, black pepper and salt.
In a deep pan put a finger of canned tomatoes, a pinch of sugar, finely chopped garlic and a bunch of parsley. Take a slice of eggplant and put the stuffing at one end. Turn and arrange in the pan. After arranging them, pour a spoonful of the remaining canned tomatoes over the eggplant and grate the yellow cheese. Bake on high heat until you get a crust of yellow cheese.

Once the dish is ready for freshness you can sprinkle it with parsley.
