CHIRPAN’S MEATBALLS WITH MIND VEAL AND SPICY SAUCE

I present to you a recipe with authentic Bulgarian taste, seized from the Thracian region.

Although we are in the season of pepper, pickled pepper and the aroma of roasted pepper is everywhere, I decided that I should “escape” from the pepper month and present you a recipe that I cook with great desire and pleasure.

The taste is balanced and the spices do not “fight” in any way, which allows you to feel both the bay leaf and allspice. And when I say allspice or Jamaican allspice, I think of allspice tea, so fragrant and dense that it carries away the senses and disperses them in NIRVANA. Apparently that is why the popular belief is that the consumption of allspice attracts money and prosperity / I leave you the choice whether it is true or not /.

So, as for the recipes, I have always been guided by the rule of strong spice – light spice, which ranks the gradual “blooming” of flavors and you get not food, but food tasting. In this recipe I violated this rule and still got delicious and nutritious dinner.

Necessary products:

0,500kg. ground beef
1 onion
1 egg
1 large potato
1/2 red pepper
2 medium-sized carrots
1tbsp flour
1. s.l. rice
600 ml. water
1tbsp hot red pepper
1 tsp pepper
100 g of tomato puree concentrate
3 grains of allspice
2 bay leaves
1 clove garlic
salt, sugar, oil

Method of preparation:

The first step I took was to prepare the minced meat. There are two options: either pre-fry your meatballs / I prepare them this way / or put them together with the potatoes without sealing them in fat and cook until done.

Season the minced meat with salt, pepper, rice and egg and fry on both sides for about 1/2 minute.
In the fat in which I fried the meatballs, I fry the onion and pepper. Add the red pepper and add 600 ml. water.

I cut the carrots into squares and the potatoes into larger cubes and pour them into the pot together with the meatballs. Boil the rice in the meatballs until ready.

I fry the flour in a pan and pour the tomato puree. Stir and add to the saucepan with the meatballs.
I add the remaining spices and cook for about 10 minutes.
