VEGAN EGGPLAN

If you like tasty, economical and effective, I suggest you try this “explosion” of the senses.
It will be good to use a medium-sized eggplant to make it easier for you to “work” on it.

Eggplant fan can be served as an appetizer or light, basic and evening. Of course, the choice is entirely yours.

Necessary products for 2 servings:

1 eggplant
1 tomato
2 packets of mozzarella / you can replace it with yellow cheese /
tomato paste
salt, savory

Method of preparation:

Cut the eggplant in half lengthwise and cut it into slices, not reaching the end, but leaving the slices connected to the base and the handle. Slightly dissolve the eggplant slices and salt. Leave the aubergines for about 15-20 minutes to drain the bitter juice and wash.

Once the fans are ready, transfer to a yen pan and spread each of them with oil, salt and savory. Between them put thinly sliced ​​tomatoes and mozzarella.

Bake in a preheated oven on the upper and lower rack for 30 minutes at a temperature of 180 degrees.

When they are ready, put tomato puree and grated yellow cheese on them and bake until it melts.
